Drunk in Toddy Chicken Curry

This dish is one of those that I came up with during my vacation at my grandmother's place while she was making us some super yummy Kallu Appams (Toddy hoppers). And I'm so happy to share my own recipes with you guys! Do try this out and send me pictures if you do try it!!

Drunk-in-toddy chicken curry

Ingredients -

3 tbsp coconut oil

1/2 tsp kalonji

1/2 tsp mustard

1/2 tsp fennel

2 green chillies chopped finely

1 onion chopped finely

1 finely chopped tomato

2 tbsp of ginger garlic paste

1/2 kg chicken (curry cuts)

1 tbsp red chilli powder

1 tbsp turmeric powder

1 tbsp meat masala (or you could use garam masala too)

2 cups Toddy (palm wine)

Corriander for garnish.

Salt to taste.

Method

Step 1 The Marinade

In a deep-dish bowl, place your chicken pieces and add in 1 tsp of red chilli powder, 1 tsp of turmeric powder, 1 tsp of meat masala or garam masala, a pinch of salt and 1/2 cup of fresh toddy and place the chicken in such a manner that it is halfway submerged into the marinade. Let the chicken marinate for at least 3 hours or even overnight. The longer the chicken marinates, the more it absorbs the flavours and gets tender and juicy. But, if you are in a hurry, let it rest for at least 30 minutes.

Step 2 Preparation

In a heavy bottomed pan, add 3 tbsp of coconut oil. Once the oil is hot, add the mustard seeds, kalonji and the fennel seeds. When you smell the fragrant aroma, add the finely chopped chillies and ginger garlic paste. Let it cook through for at least 2 minutes and then add the finely chopped onions. Let the onions cook for about 3 minutes after which you can add the 1/2 tsp red chili powder, 1/2 tsp turmeric powder and 1/2 tsp meat masala (garam masala). Sautè for about a minute, after which you can add tomatoes and sauté the mixture. Once the tomato is cooked add the marinated chicken pieces into the pan one by one without adding the marinade mix.

Sauté the chicken into the masala and let it cook for about two minutes after which you can go ahead and add the marinade mix. Let the chicken cook in it. Once the chicken is semi cooked after 5 - 10 minutes add 1. 5 cup toddy and let the chicken cook in the gravy for about 10 minutes more.

After 10 minutes, turn off the flame and garnish the curry with crushed kasuri methi. Serve with hot rice or rotis.
