The Summer Peach Galette

So peaches have been my most favourite fruits for the longest time and each year, I literally wait for these beauties to finally arrive in the market. I feel my love for peaches comes from this one episode from Nigella Lawson's TV series, in which she was making this amazing peach dessert. Back then, peaches were a rare sight, well at least for me they were! And because I LOVE Nigella (like most of us), I wanted to try these beautiful fruit. Oh! By the way, in the episode, she (Nigella) spoke about peaches - describing them as "Blushing beauties" and that's what got me hooked at first, but soon I realized the flavours of this fruit beautifully compliment most sugary desserts and if paired with wine it is insanely amazing! But that's a story for another day. So, lets dive into this galette drama, shall we? I had always heard of galette in cooking shows but here in India I hadn't ever seen an actual one, and so, since my favourite fruit was in season, I decided to finally give this recipe a go!


The Summer Peach Galette


Ingredients

So, for my pie crust dough I referred to Rajshri foods pie crust recipe, and it's not my own, so I'll put in the link below this:

For the pie crust :

· 350 gms. All purpose flour

· 1½ tbsp. Powdered sugar

· 225 gms. Butter (cubed)

· 1½ tbsp. Chilled water


For the Filling :

· 4 Peaches cut into equal sized wedges

· 1 tbsp of cornflour

· 3 tbsp of castor sugar

· 1/2 tsp of cinnamon powder.

· 1 tbsp of butter


For the egg wash :

· 1 Egg

· 3 tbsp water


Method


Prepare the pie crust dough. (According to the video reference above)


· In a bowl, mix the flour with powdered sugar and transfer it on a counter.

· Then add butter cubes and incorporate butter into the flour and sugar mixture till it looks like wet sand.

· Bring this flour together using chilled water. (Use as little water as you can)

· Once the dough comes together, divide it into 2 parts and shape it into a disc.

· Cover with a cling wrap and refrigerate for 30 minutes. Meanwhile...


For the filling you



· Take a bowl and add in all the peach wedges along with 3 tbsp of sugar and 1/2 tsp of cinnamon powder, now mix this well without bruising the peaches to much (Since presentation matters hehehe)

· Once the peaches and sugar combine and make a syrup add in the cornflour (do not skip this part, since the cornflour thickens the extra liquid when we bake the galette and adds a nice thick jam constancy to the peach residue)

· Mix all this together and add one tbsp of butter and mix into to the syrup.

· Keep the mixture aside to assemble the galette.


Assembling the Galette


· Preheat your oven at 180°C

· Roll out your pie crust dough and with help of a bowl or if you can just roughly trace and cut out a circle from the Pie crust dough

· Now transfer this pie crust onto your baking tray very carefully. (If it breaks, don't worry. We can press the edges together and fix it.)

· Once the pie crust is on the baking tray, start arranging the peaches in any pattern you like and remember not to add the syrup on peaches just yet! (We can do that once the galette has been assembled.) Leave some space on the outside to wrap the sides of the galette.


· Now lightly brush the sides of the pie dough with egg wash (This helps the crust to stick together and not fall apart.)

· Once that is done, start either folding the sides of the galette on top of each other, or you could, with a very light hand, pleat the sides together. (Like in the picture below.)


· Once the edges of the galette are secure, go ahead and add the all the peachy syrup into the galette with a lot of grace and poise (like Nigella would do), but not too much or the galette will leak!

· Brush the pie crust on top lightly with your egg wash. And now we are ready to bake!


· In a preheated oven, bake your galette at 180°C for about 25-35 minutes.

· You'll know it’s done, when the crust is nice and golden brown.

· Once done, take them out and let them cool a bit before serving, just plain with some powdered sugar, or as I like to serve them, with a dollop of vanilla ice cream.
